The *.*.* is wildcard addressing in GW and stands for domain.postoffice.user so this is not related to the user@domain format, this is the documentation related and you can see what can be set or not
As Rob has explained, there is no way.
However if you synchronize with ldap and you get your groups from there then you can create a dynamic group with exceptions in ldap. After synchronization you can use it in GroupWise.
I can imagine that there are more ways to bypass wildcards "limitation".
