configuring novell-zenworks-configure menu
How can I modify the defaults when I run the command?

The database was moved off last year and it's supposed to be running proxy-dhcp/ I've poked around a bit but haven't figured it out. I'm sure there's conf file somewhere

I don't believe it is configurable.
In regards to the Database.....
I'm not sure if its coming up because the Sybase Database was never uninstalled or maybe it's the role.
SELECT * FROM zZENServerRoles WHERE Roles = 'Database' (Make sure this points to your correct Server)
But as AFAIK those are always the defaults, with the exception of the DB not being listed when Sybase is not installed.
But Checking the Docs.....We don't instruct to remove the Database Software....simply disable it.
IMHO...It would be great if the Docs Detailed how to UNINSTALL the DB as well.....
Perhaps submit a Doc Comment...They DO actually read the feedback....
