There is no good way. Wipe and rebuild. This is where virtualization
comes in handy, as you can revert to a snapshot taken immediately prior
to installing Mobility.

Is there a way we can find the changes in the new Builds?

The documentation says to refer to the readme in the build, but there is no
information the readme.

I would like to keep my builds updated, but would like to know the changes
for testing before I do the update.

You're right. There is no Readme in the build except the pointer Readme that links to the Readme on the Web:
