OS: the basics, like CPU, Memory, Disk access
JVM: Heap size, JDBC pool size, server pool size, GC stats

I would actually suggest you download and use the J2EE Diagnostics Profiler. This has been invaluable for me in driving performance improvements. It will show you a wealth of JVM information and low-level code metrics.
