I finally found time to reset the server. This seems to have done the trick, the MTA is now picking the internal IP address from the HOSTS instead of the external from the DNS provider. Not how long this will last though!!

It should be forever, or until you change the file and restart things
again. The problem was getting the server to see the changes in the
first place, not getting it to keep using them.
