OES Server hits between 80% and 100% utilization after 6pm

It doesn't happen every day but at least 4 or 5 times a week. Our server
hits between 80% and 100% utilization and we can't browse folders or print
for two or three hours until it gets back to normal. Volume compression
starts at midnight and ends at 6am so it can't be that. I shutdown McAfee
antivirus and it stayed between 80% and 100% and then I turned off Backup
Exec and it still stayed between 80% and 100%. Our business runs between
6am and Midnight so it's a big problem for us. Did you ever see something
like this before? Thanks.
