Prune old data from server

I have set up the Server Consolidation tool before to only copy data between certain dates which allowed me to leave behind old data on a server volume.

What I would like to do now is use a tool like this to copy off old data between a certain date range to a different server volume and then delete the old data off of my production server. Basically pruning the old data but keeping a copy. Server Consolidation tool does everything I want but delete the data off of the production volume after the copy.

Any suggestions?
