As mentioned, for a really good backup, you do need to root.

I root'ed my EVO before I got too attached to it and before had too much
installed but now I can backup everything and anything which is nice. The
concept that they "want" you to do is to put all your contacts and email
into the cloud so it's always backed up yet they provide hardly nothing
stock to do a real backup.

Now question is, has anyone got root available for Galaxy S yet?

They had it very early on. This seems to be where things are on the VZW
