My guess is that 10.1.1 will need to be deployed to workstations prior to

Update for ZCM (10.1.1) is in my Available System Updates list. I also have
ZCM Update 10.1.0. If I select 10.1.1 update and choose to download update,
status change to Downloading and after 5 seconds, status come back to
Available.
Why ?
Should I have to delete ZCM Update 10.1.0 from the Available System Updates
list ?

No, you should not have to.
You can also grab the 10.1.1c update from download.novell.com
