Printer options

Is there any way to have device options get pushed out to machines when
an iPrint printer is installed?

For example, if a printer has a duplexer, could that be set in the
iPrint printer so the duplexing option does not need to be set on every
computer that has that printer installed?

OES2SP2 and later support auto update of drivers and driver profiles, so if you modify the driver profile then they should get auto updated on your workstations where the iPrinter is installed.
